Advanced Nutritarian Studies Course Overview
1. The Basics of Nutrition
Part 1 of the course covers the basic fundamentals of nutritional science and the health benefits of certain classes of phytochemicals. Nutritional Sciences: From Fundamentals to Food, one of our required reading books discusses the fundamental principles of nutrition, including topics such as macronutrients and micronutrients, energy balance, basic biochemistry, and energy metabolism. Our second required textbook, An Evidence-Based Approach to Dietary Phytochemicals and Other Dietary Factors discusses specific classes of phytochemicals such as carotenoids, flavonoids, isothiocyanates, and essential fatty acids, and their roles in human physiology and health.
2. Dr. Fuhrman’s Body of Knowledge
Part 2 of the course focuses primarily on Dr. Fuhrman’s writings, based on both the scientific literature on diet’s role in health and his years of experience treating and preventing chronic disease with excellent nutrition. Students are encouraged to read and study Dr. Fuhrman’s books: Fasting and Eating for Health, Disease Proof Your Child, Eat to Live, Eat for Health and Super Immunity. Additional information is provided in Dr. Fuhrman’s Healthy Times Newsletters and Position Papers, commentaries, supplement recommendations, toxic hunger tutorial, and selected scientific literature.
